Ingredients:
1/4 cup chopped cooked pancetta or bacon
1 tbsp salt
8 oz penne pasta
1 cup heavy cream or milk
1/4 cup grated Parmesan cheese
1 tsp butter
1 tbsp dried tomato pesto
1/4 cup marinara sauce
1/4 cup frozen peas
8 oz chicken breast, cooked and shredded
Directions:
- cook pancetta over medium low heat until almost done or not quite crisp. drain and reserve
- boil and cook pasta as directed on box.
- In a large pot combine cream, Parmesan, butter, pesto, marinara and cooked panceta. Cook over medium heat, stirring until Parmesan melts and sauce is combined.
- Add peas and chicken, then pasta, folding everything together. Serve in bowls with additional parmesan cheese.
