Salmon Croquets

This is a recipe from my mother. A big favorite for my kids. Only way to get fish in them.
Serve with Super Rice and broccoli and cheese.
Ingredients:
1 can salmon, save juice
salmon juice plus milk to make 1 cup
1/4 cup butter
2 tbsp minced onion
1/3 cup flour
1/4 tsp salt
1 tbsp lemon juice
1 cup cornflake crumbs or crushed Ritz or club crackers
salt and pepper to taste

Directions:
  1. Drain salmon and de-bone it. 
  2. Save liquid in measuring cup. add enough milk to make 1 cup of liquid.
  3. Melt butter in skillet and add onion.  cook for 3 minutes on medium.
  4. add milk and salmon juice
  5. add flour, salt and pepper
  6. stir until thickened
  7. add salmon and lemon juice
  8. stir in 3/4 cup crumbs
  9. chill in tuperware for 1/2 hour
  10. Roll into balls and cover with remaining crumbs.
  11. Bake at 400 degrees for 25 minutes.
