Serve with Super Rice and broccoli and cheese.
Ingredients:
1 can salmon, save juice
salmon juice plus milk to make 1 cup
1/4 cup butter
2 tbsp minced onion
1/3 cup flour
1/4 tsp salt
1 tbsp lemon juice
1 cup cornflake crumbs or crushed Ritz or club crackers
salt and pepper to taste
Directions:
- Drain salmon and de-bone it.
- Save liquid in measuring cup. add enough milk to make 1 cup of liquid.
- Melt butter in skillet and add onion. cook for 3 minutes on medium.
- add milk and salmon juice
- add flour, salt and pepper
- stir until thickened
- add salmon and lemon juice
- stir in 3/4 cup crumbs
- chill in tuperware for 1/2 hour
- Roll into balls and cover with remaining crumbs.
- Bake at 400 degrees for 25 minutes.
