Stuffed Chicken Breast

This recipe is from my mom. She use to make this all the time when I was a child. I love the crunchy outer coating of the chicken from the lite oil you brush it with. So yummy.

Ingredients:
4 chicken breasts
1 pkg. stuffing mix
salt and pepper
olive oil
tooth picks

Directions:
  1. Make stuffing and set aside.
  2. flatten chicken breast out with mallet. Rub chicken with olive oil on both sides.
  3. Lay flat and scoop a small amount of stuffing onto the chicken breast.
  4. Roll up and pin with tooth pick.
  5. salt and pepper to taste.
  6. bake at 375 for 45 minutes.
** I serve this with supper rice (recipe to come) and a green veggie.
